At first glance, Rice and Curry may seem like a simple dish: white rice accompanied by a selection of curries. However, it is much more than that. Each component is prepared with a combination of spices that varies from region to region and from family to family, making each meal unique.

Rice accompaniments include meat, fish or vegetable curries, spicy chutneys, fresh sambols such as Pol Sambol (made from shredded coconut) and fermented pickles that add layers of texture and flavor.

 

The secret of Sri Lankan spices

The magic of Rice and Curry lies in the spices, which are used generously. Some of the most common include:

Step by step to recreate this delight at home

If you want to recreate this gastronomic experience at home, follow this simple recipe for an authentic version of Rice and Curry.

Ingredients:

  • For the rice:
    • 2 cups basmati or long grain rice
    • Water and salt to taste
  • For the vegetable curry:
    • 2 tablespoons of coconut oil
    • 1 medium onion, chopped
    • 2 chopped garlic cloves
    • 1 small piece of grated ginger
    • 1 chopped ripe tomato
    • 1 small sweet potato, peeled and diced
    • 1 carrot, sliced
    • 100g chopped green beans
    • 1 teaspoon turmeric
    • 1 teaspoon chili powder
    • 1 teaspoon coriander powder
    • 200ml coconut milk
    • Salt to taste
    • Curry leaves (optional)

Method of preparation:

  1. Cozinha o arroz: lava o arroz em água fria até que fique transparente. Cozinha com o dobro de água e uma pitada de sal. Reserva.
  2. Prepara o curry:
    • Aquece o óleo de coco numa panela grande e refoga a cebola, o alho e o gengibre até ficarem macios.
    • Adiciona as especiarias e o tomate, cozinhando até formar um molho espesso.
    • Acrescenta os vegetais e mistura bem, deixando que absorvam os temperos.
    • Adiciona o leite de coco e as folhas de curry. Cozinha em fogo brando até que os vegetais estejam macios e o molho encorpado.
  3. Serve: coloca o arroz no centro do prato e organiza os acompanhamentos ao redor. Acrescenta chutneys ou sambols para um toque autêntico.
